So, on to your question: I believe that bananas are really the ones that make this cake well, this cake. However, if I had to suggest another fruit (although I haven't tried baking it with anything but bananas), I'd go with pears. To me, they'd be the closest ones in texture and sweetness level to compare. If you do try with pears, opt for some that are ripe but still firm, so you can keep the pieces intact like you'd do with the bananas.
